Nothing brings a tailgate crowd together quite like a loaded tray of nachos! Our Loaded Carne Asada Tailgate Nachos put the carne asada from this month’s Bearcat Tailgate Bundle front and center, piled high with melty cheese, fresh toppings, and plenty of Texas flavor. Easy to assemble and even easier to share, they’re the perfect addition to Friday night football, Saturday watch parties, or any game-day gathering.

Ingredients

  • 1 lb. Beaty Cattle Company Carne Asada
  • 1 large bag sturdy tortilla chips
  • 2 cups shredded Monterey Jack or Mexican-blend cheese
  • 1 can black beans, drained and rinsed
  • 1 jalapeño, thinly sliced
  • ½ small red onion, diced
  • 1 Roma tomato, diced
  • 1 avocado, diced
  • ¼ cup chopped fresh cilantro
  • Sour cream, for serving
  • Salsa or pico de gallo, for serving
  • Lime wedge

Instructions

Heat a grill or cast-iron skillet over medium-high heat. Cook the carne asada until browned and cooked through, then let it rest briefly before chopping it into bite-sized pieces.

Spread the tortilla chips in an even layer on a large sheet pan or grill-safe pan. Top with black beans, chopped carne asada, shredded cheese, jalapeño and red onion.

Bake at 400°F for 5–8 minutes, or place the pan on a covered grill over indirect heat, until the cheese is melted and everything is hot.

Finish with diced tomato, avocado and cilantro. Serve immediately with sour cream, salsa and plenty of fresh lime.

Tailgate Tip: Prep your toppings at home and pack them separately in the cooler. Cook the carne asada at the tailgate, assemble everything in a disposable foil pan, and melt the cheese right on the grill.
