Hanging Weight Explanation

When we price beef, we use hanging weight (approximately 60% of the live weight). After cutting, trimming, and packaging, you’ll receive about another  60% of that weight in “freezer‑ready” meat.

The current price for locker beef is $6.50/lb per hanging weight.

*The estimated price includes ALL costs (beef, feed, & processing). Based on these examples you can expect to pay approximately $4000-$4800 for a whole beef. A half beef would be approximately $2000-$2400. 

To make sense of how much meat you actually get, it helps to understand the three stages of the animal's weight:

  1. Live Weight (Hoof Weight): How much the living animal weighs on the farm scale.
  2. Hanging Weight: The weight of the carcass after the hide, head, hooves, blood, and internal organs are removed. It is weighed while "hanging" in a refrigerated cooler, which is where it gets its name.
  3. Packaged Weight (Take-Home Weight): The final weight of the steaks, roasts, and ground beef you actually put in your freezer.

Next Steps:

  1. Email us at [email protected] to secure your spot and schedule a processing date.
  2. Prior to the harvest date, you will complete a custom cut sheet indicating the cuts you want & how you want your meat packaged
  3. Your beef will be processed/butchered by a third-party processor at a USDA or State Inspected Facility.
  4. The beef will “hang” for 2 weeks before being cut up and packaged. 
  5. You will pick your beef up (1) from the processor, (2) from our store or (3) we will deliver it to you.
  6. When you receive your beef it will be in cuts, vacuum sealed, labeled, frozen, and boxed.
  7. Our prices include ALL expenses, including the processing/butcher charges (there are no hidden fees or taxes).
  8. When you place an order with us, we ask for a deposit. The balance will be due to us, at or before the time of delivery or pick up.

General Information

Good estimates to go by for the weight of meat you will receive is:

  • Quarter beef averages 80-100 lbs of meat
  • Half beef averages 200-250 lbs. of meat
  • Whole beef averages 400-500 lbs. of meat

Normal dry-age time is 14 days. From the appointment date, it typically takes the processor just over two weeks to have your meat ready for pick up.

Meat Cuts

We will provide you a cut sheet a few weeks prior to your processing date. You will select the cuts of beef you want and how you want it packaged (size, number per package, thickness, etc...) You will return the cut sheet to us and we will take it to the processor when we deliver your calf. They will contact you if they have questions or need clarification on your order.

  • Steaks (New York Strip, Rib-Eye, Filet, T-Bone, Sirloin)
  • Tenderized Round Steak or Sirloin Tip Cutlets
  • Short Ribs
  • Roasts
  • Brisket
  • Stew/Chili Meat
  • Ground Beef
  • Additional cuts/special instructions may also be noted on the form
