Homemade Hamburger Helper from Scratch

Skip the boxed version and make this classic comfort food from scratch in one pan! This Homemade Hamburger Helper is creamy, cheesy, and packed with flavor—ready in about 30 minutes using pantry staples.

Ingredients
    •    1 pound 80/20 ground beef
    •    1/2 cup finely chopped yellow onion
    •    2 tablespoons tomato paste
    •    1 teaspoon chili powder
    •    1/2 teaspoon garlic powder
    •    3/4 teaspoon kosher salt
    •    1/4 teaspoon freshly ground black pepper
    •    2 1/4 cups beef broth, divided
    •    1 cup milk
    •    1 cup uncooked elbow macaroni
    •    1 teaspoon cornstarch
    •    6 ounces shredded sharp Cheddar cheese (about 1 1/2 cups)

1. Brown the Beef and Onion

In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is soft, about 5–7 minutes. Drain any excess fat if necessary.

2. Add the Seasonings

Stir in the tomato paste, chili powder, garlic powder, salt, and pepper. Cook for 1–2 minutes to allow the flavors to blend.

3. Add the Liquids and Cook the Pasta

Pour in 2 cups of the beef broth and the milk. Stir in the elbow macaroni. Bring to a boil, then reduce heat to a simmer. Cover and cook for 10–12 minutes, stirring occasionally, until the pasta is tender.

4. Thicken the Sauce

In a small bowl, whisk together the cornstarch and remaining 1/4 cup beef broth until smooth. Stir this slurry into the skillet and simmer for another 1–2 minutes until the sauce thickens.

5. Add the Cheese and Serve

Turn off the heat and stir in the shredded Cheddar cheese until melted and creamy. Serve hot and enjoy your homemade hamburger helper!
