Creamy Burrito Casserole: A Hearty Family Favorite!
Hi friends! Today, I’m sharing a cozy, crowd-pleasing dinner that my husband absolutely adores: Creamy Burrito Casserole. This easy recipe is perfect for busy nights, potlucks, or whenever you’re craving something warm and comforting. With layers of seasoned beef, creamy beans, and gooey melted cheese, it’s everything you love about burritos – but in an easy-to-assemble casserole!

Ingredients:
• 1 lb ground beef (I use Beaty ground beef)
• ½ medium yellow onion, chopped
• 1 (1.25-ounce) package Siete taco seasoning (or your favorite taco seasoning!)
• 6 large flour tortillas
• 1 (16-ounce) can refried beans
• 2–3 cups cheddar cheese, shredded
• 1 cup sour cream (or more, to taste!)
• Hot sauce, to taste (optional)

Instructions:
1. Brown the Beef & Onion
In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is tender.
2. Season & Stir
Add the taco seasoning to the beef mixture, then stir in the refried beans until everything is well combined.
3. Layer the Casserole
In a greased 9x13-inch baking dish, spread half of the sour cream on the bottom.
4. Tortilla Time
Tear 3 of the flour tortillas into bite-sized pieces and layer them over the sour cream.
5. Add the Meat Mixture
Spread half of the beef and bean mixture over the tortillas.
6. Cheesy Goodness
Sprinkle a generous layer of cheddar cheese over the beef mixture.
7. Optional Heat
If you like it spicy, drizzle some hot sauce over the cheese layer!
8. Repeat Layers
Repeat the layers with the remaining sour cream, tortillas, beef mixture, and cheese.
9. Bake
Top with extra cheese and bake the casserole uncovered at 350°F (175°C) for 20–30 minutes, until the cheese is melted and bubbly.
